French Toast Casserole
I love having something easy to throw together for the school week so the kids aren’t just eating grab & go items. This is also a great dish for company because it looks pretty and tastes great! I’ve adapted it a bit from one I found online to make it a tad healthier (all that butter!!). We eat it cold or hot but I like it best right out of the oven.
French Toast Casserole
2 cups milk
6 eggs
2 Tbsp vanilla
Loaf of French bread (I use about 2/3)
1/4 cup butter
1 cup brown sugar
Melt butter and mix with brown sugar Spread it evenly on the bottom of a 9x13 baking dish. Mix remaining ingredients and pour on top. Let casserole sit overnight if you want but I often bake it right away As long as you give the bread time to absorb the eggs you’ll be fine!
Bake at 350 for around 30 minutes
I love this one because I can keep all of the ingredients in the house as long as I grab a loaf of bread when I plan to make it I think you could easily freeze servings of this for a version of grab & go. I often make this and a similar egg & sausage casserole so that I can double my egg/milk/bread mixture and then just add the extras for each one
