French Toast Casserole

 I love having something easy to throw together for the school week so the kids aren’t just eating grab & go items. This is also a great dish for company because it looks pretty and tastes great! I’ve adapted it a bit from one I found online to make it a tad healthier (all that butter!!). We eat it cold or hot but I like it best right out of the oven.  French Toast Casserole 2 cups milk  6 eggs 2 Tbsp vanilla Loaf of French bread (I use about 2/3) 1/4 cup butter 1 cup brown sugar  Melt butter and mix with brown sugar  Spread it evenly on the bottom of a 9x13 baking dish. Mix remaining ingredients and pour on top.  Let casserole sit overnight if you want but I often bake it right away  As long as you give the bread time to absorb the eggs you’ll be fine!
